Breakfast Quinoa

Pictured: breakfast quinoa prepared with apple and topped with yogurt, blueberries, and brown sugar.

Original recipe from Hy-Vee Seasons Magazine.

Yield: 4 servings.

Ingredients:
  • 1/2 c oatmeal
  • 1/2 c quinoa
  • 1 t cinnamon
  • 1/4 t salt
  • 2 T ground flax seed, opt
  • 1 apple, peeled and chopped, opt
  • raisins to taste, opt
  • 2 c water
Directions:
  1. Combine all ingredients in a large microwaveable bowl.  Microwave 10-12 min, stirring once or twice.
  2. Top with favorite toppings.
